These are jaggery coated Plantain chips also known as Sharkkaravaratty (ശർക്കരവരട്ടി) in Malayalam. The chips are made out of half-cut banana chips, dipped in a solution of jaggery and then deep fried. The jaggery mix usually contains a tinge of hing to give the final product added flavor and taste.
