Pappadams, also known as Fryums is part of a traditional Kerala\South Indian meal. They are made with the best quality black gram (urad dal) flour and are shaped like a disk. They are then deep fried in hot oil to make them ready for eating. Typical varieties are those that puff up and those that stay flat. Both varieties are crisp and slightly salty. The variety that stays flat are most often referred to as Appalam.

The Malabar Treats Guruvayoor pappadam are the variety that puffs up on frying. They need to be kept refrigerated before cooking, if you are planning to store them for extended period of time.
