Anchovies are small silvery fish, which are high in the omega-3 fatty acids EPS and DHA. The fresh anchovies are first boiled in sea water or 3% salt water. Then the fish is strained and dried naturally under strong sunlight. Dried Anchovies are used in many dishes from southern part of Kerala. Anchovies contain a high amount of potassium which is good for muscle and digestive functions of the human body. Anchovies in dried form maintains almost the same amount of nutrients. Hence dried anchovies are good form of preserving the healthy aspects of anchovies without having the need to cool them to freezing temperatures.
