Pathiri or rice rotis as commonly known as outside of Kerala, is an Indian style flat bread popular in the northern region of Kerala – also known as the Malabar region. These rotis are prepared using just three ingredients; rice flour, cooking oil and water. These soft and thin roti like bread is made by mixing rice flour with warm water and a little oil, into dough and then making flat, thin circular shaped roti like patties out of them. These rotis\patties are then cooked on a tawa without any oil. If made right way, these rotis\patties would puff up just like chapathis while cooking.
