Jeerakasala rice is a distinctive and aromatic variety of rice, particularly associated with the South Indian state of Kerala, specifically the Wayanad district. The grains are medium-sized and have a shape that resembles cumin seeds (jeera in many Indian languages), hence the name “Jeerakasala.” It’s known for its strong, pleasant aroma, which adds a unique flavor to dishes. It’s a popular choice for preparing biryani, especially in the Thalassery region of Kerala. Its aromatic qualities enhance the flavor of this dish. It’s also used in other traditional South Indian preparations, such as ghee rice (neichore), uppuma, payasam, and puttu.
