Ney Pathiri, also known as Ney Pathal or Poricha Pathiri, is a traditional deep-fried rice flatbread from the Malabar region of Kerala, India, particularly popular among the Mappila Muslim community. The name “ney” refers to “ghee” or “oil” in Malayalam, indicating its deep-fried preparation, which gives it a crispy exterior and soft interior. It’s a staple dish often served for breakfast, dinner, or special occasions like Ramadan, Eid, or weddings.
Key Features of Ney Pathiri:
- Ingredients: Made from rice flour (often fine roasted rice flour or pathiri podi) or soaked rice ground into a coarse paste. The dough is flavored with a coarse mix of grated coconut, cumin seeds, shallots (or onions), and sometimes fennel seeds or chopped spinach for variations. Salt and boiling water are used to form a soft, thick dough.

- The coconut, cumin, and shallots are coarsely ground (not a fine paste) and mixed with rice flour.
- Boiling water is added to form a smooth, non-sticky dough, which is kneaded while warm.
- The dough is shaped into small balls, flattened into thick discs (about 1 cm thick, similar to a thick puri), and deep-fried in hot oil or ghee until golden and crispy. The oil must be very hot for the pathiri to puff up properly.
- Some recipes use a chapati press or plastic sheets to shape the discs evenly.
- Texture and Flavor: Ney Pathiri is crispy on the outside, soft inside, and aromatic due to the coconut, cumin, and shallots. It’s thicker and crispier than a regular puri but less dense than a parotta.
