Nool parotta is made from all-purpose flour (maida), water, oil or ghee, salt, and often an egg, milk, or curd to make the dough soft. Nool porotta compared to the regular malabar or kerala portta, is thinner and flakier while having more layers packed into a thinner profile.

Here we blend the traditional methods with 18 types of 5 high grade rice compositions to bring out the best product. The rice is disinfected before grinding it and is fried in ‘traditional ovens’ or ‘Smokeless Chulahs’ using firewood. This traditional process of slow cooking preserves the nutrients in the rice particles. Further processing is done in ISO and HACCP certified manufacturing plants to ensure and maintain purity and quality.
